Notice that it is recommended to set aside a quarter of a cup of flour for use while kneading. It's important to have a set amount of flour allotted before you begin kneading. That way, you won't accidentally put too much flour in the bread.

The basic process goes like this:

get your dough together

Coat your hands with flour.

And then the kneading process is quite simple: Take the dough, fold it to you, turn it a quarter turn, push it in. And then repeat until the dough becomes smooth and shiny.
